Chilled grain drinks like this shake, or resbaladera, are popular throughout Central and South America. Enjoy this over ice on a hot day or as a dessert or snack similar to a milkshake or smoothie.
1 cup long-grain white rice
3 cups water
1 cinnamon stick
2 cups vanilla-flavored rice or soy milk
3 teaspoons vanilla extract 1⁄2 cup granulated sugar
Place rice, water, and cinnamon stick in a saucepan and bring to a simmer over medium to medium-high heat. Cook for about 20 minutes or until rice is tender. Remove from heat and let cool.
Remove cinnamon stick and pour mixture into blender; blend on low, gradually adding in milk until just combined.
Strain the thick, blended liquid into a pitcher or large container, using a spoon to press down solids and squeeze out as much liquid as possible.
Add vanilla extract and sugar, stirring to combine. Add water or more milk to create the consistency you like.
Refrigerate until well chilled, then serve.
